My Dirty Little Secret (Yes, another one.)


I have something to confess. I have been keeping a little secret from you, and I feel so bad about it that I can’t even sleep anymore. Okay, here it is. I made cupcakes out of the box on Valentine’s Day, and worst of all, I think they may have been the best cupcakes I’ve ever had. Moist yellow cake, creamy chocolate frosting, Andrew and I ate half of them before dinner (which was, of all things, meatloaf). So, I’m sorry. I should have told you sooner, but I was just too scared. Then I thought, well, you have been quite understanding when it comes to my missteps. You confessed that you, too, like dinner from taco trucks, and you love Velveeta. So I figured you could handle this one, as well. I had all intentions of making red velvet cupcakes from scratch, including the frosting, but the day just got away from me. So I was left with a very difficult decision, Betty Crocker or Duncan Hines. I went with Betty. She was on sale, and she was delightful. So again, I am realizing the road to becoming a foodie is a long and treacherous one, marked with fast food, processed cheese and cupcakes out of the box. Hey, at least that Drink of the Week was good, right? Right?

It's okay. My birthday cake every year is strawberry cake from the box (you know - the super pink cake) with cream cheese frosting from the can. It has become this weird tradition. I only have it once a year, but it's not my birthday without it.

oh man. but nothing beats a homemade cupcake. nothing!

Don't be ashamed! I don't bake often anymore (it makes me sad to say that) so when I do I often use a boxed mix in the interest of convenience.

I generally go with Duncan instead of Betty, he and I just get along better ... lol. His Yellow cake mix has gotten me some rave reviews in the past, and he doesn't even mind when I take the credit.

But I draw the line at adding oil to a cake, like most of the mixes call for - no way. Real butter, all the way. It makes such a difference.

We all have confessions... I made brownies from a mix the other night. It was Ghiradelli, does that make it better?
If you ever want a super easy yellow cupcake recipe, let me know, we have a family favourite.

i admit that my favorite cupcake is the funfetti boxed cupcake mix. the shame!
